(1) Selection: Pick yellow okra fruit with a length of 10 to 15 cm without pests and diseases and mechanical damage as raw material.
(2) Blanching: The okra fruit is blanched in water or steam at 80-100 °C for 2 to 10 minutes, and then drained.
(3) Sectioning: The root pedicles and the tips of the two pods of the okra after the blanching are removed, and the even part in the middle is kept for sectioning, and the slice thickness is controlled to be 1 to 2 cm.
(4) Quick freezing: The sliced okra is frozen at 18 to 50 ° C for 10 to 24 hours.
(5) Vacuum frying: The frozen okra fruit pieces are fried under a condition of a vacuum degree using Liuyi's vacuum frying machine.
